Mature, dried red sweet bell peppers (not hot), cut into 3/8 inch dices. Used for pasta sauces, stews, soups, meat loaf, casseroles, and rice dishes. One pound of dried bell peppers is equivalent to 10 pounds of fresh. Average out to about three green peppers
